All of them are considered simple sugars but they differ on the chemical structure which impacts how our body absorbs and digests them. Glucose and fructose are categorized as monosaccharides while sucrose is a disaccharide.

Monosaccharides are made up of a single sugar unit and considered as the building block of carbohydrates. Monosaccharides no longer need to be broken down before our body can use them. They are directly absorbed into our bloodstream. 

On the other hand, disaccharides are composed of two monosaccharides and need to be broken down before our body can fully use them. Partial breaking of disaccharides happens in our mouth but the majority of them occur in our small intestine.
